Irish Ham and Mashed Potatoes With Brussel Sprouts
February 10, 2024Steps:
- Prepare noodles according to package instructions.
- Mix sauce in a small bowl.
- Fill a saucepan or small pot with water and bring to a boil. Blanch broccoli until bright, vibrant green and slightly tender (around 2 minutes). Drain and set aside
- Heat oil in a wok or large nonstick frying pan over high heat.
- Add garlic and chili and fry until fragrant. should be around 15 seconds.
- Add onion and cook for 1 minute.
- Add chicken and fish sauce and fry for 2 minutes, until the chicken is almost cooked through. Then add broccoli and toss.
- Finally add green onion, noodles, and sauce and cook until the sauce has reduced and coated the noodles.
- Remove from heat and toss in the Thai basil. plate and serve.
Ingredients:
200g dried rice noodles
2 tbsp vegetable oil
3 cloves garlic, minced
1 birds eye chili, very finely minced
½ onion, sliced
4 chicken thighs, cut into bite sized pieces
1 tbsp fish sauce
3 stalks green onion, cut into 1 inch segments
½ stalk of broccoli cut into florets
1 cup Thai basil
Sauce
3 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp palm sugar (white sugar can be used as well)
1 tbsp water
